CHEF STEVE'S MOLTEN CHOCOLATE CAKE
"This recipe was one of my mainstays. This is a single serving cake that is soft in the center, when it is cut open the sauce lows out into the ice cream, this was of of my best selling desserts in the 15 years I owned my Restaurant."
8 oz semi sweet chips
8 oz sweet butter
4 egg yolks, plus 5 whole eggs
1 cup sugar
1 cup flour
Ice cream (for serving)
Preheat oven to 500 degrees F.
Melt chips and butter in double boiler. Combine with flour. Place in mixer; add egg yolks and eggs one at a time while beating at medium speed.
Butter and flour French rosette pans (tart pans). Add batter to pans to 2/3 full.
Bake at 500 degrees F for exactly 7 minutes, Serve immediately with ice cream.
