Recipe: Pineapple Mandarin Orange Cake (using cake mix) (microwave)

PINEAPPLE MANDARIN ORANGE CAKE

FOR THE CAKE:
1 box pineapple cake mix (2-layer size)
4 eggs
1/2 cup cooking oil
1 can mandarin oranges (with juice)
FOR THE FROSTING:
1 (8 oz) can crushed pineapple, undrained
1 box pineapple (or vanilla) instant pudding mix
1 small container Cool Whip, thawed

TO PREPARE THE CAKE:
Mix together cake mix, eggs, oil, and oranges (with juice) and beat for 4 minutes. Pour into 3 glass cake pans (lined with wax paper).

Microwave 7 minutes on 8 (power level).

TO PREPARE THE FROSTING:
While cake is cooking, pour the dry instant pudding over the pineapple. Let stand until cake is cooled. Blend Cool Whip into pudding. Frost cooled cake layers.
