Recipe: Pineapple-Cucumber Salad

Hi Sandi!
I found a recipe called Pineapple-Cucumber Salad in Jell-O's Joy of Gelatin cookbook...however it doesn't have cottage cheese and onions..lol..I'm sure you can add whatever you like to it..I was looking through the recipes and noticed that the base of all the salads seem to be the same, as far as the jello and water amount...They add as much as 16 ounces cottage cheese...1/4 cup celery..1/4 cup onions...etc..so I'll just bet you can add what you would like!!

Pineapple-Cucumber Salad

1 can (8 1/4 oz.) chunk pineapple in syrup
1 package (3 oz.) Jell-O gelatin, lime flavor
Dash of salt
1 cup boiling water
1-2 tablespoons vinegar
1 cup diced cucumber
2 tablespoons finely chopped pimento

Drain pineapple, reserving syrup. Add water to syrup to make 3/4 cup. Dissolve gelatin and salt in boiling water. Add measured liquid and vinegar and chill until slightly thickened. fold in pineapple, cucumber and pimento. Pour into 4 cup mold. Chill until firm. Unmold and garnish with cucumber slices if desired. Makes 6 servings.
