Recipe: Pineapple-Garlic Pork Chops (grilled, using pineapple juice)

PINEAPPLE-GARLIC PORK CHOPS

1 cup unsweetened pineapple juice
2/3 cup dry sherry (or water)
2 tbsp. brown sugar
1/2 tsp. dried rosemary leaves, crushed
1 clove garlic, minced
4 (6 ounces each) pork loin chops, about 1-inch thick

Combine all ingredients, except pork chops, in a bowl and mix well.

Place pork in a shallow dish and pour marinade over. Cover and marinate in refrigerator overnight, turning once or twice.

WHEN READY TO COOK:
Prepare grill or turn on broiler. Remove pork chops. Pour marinade in a saucepan and boil for a few minutes.

Grill or broil pork chops 5-6 minutes per side or until done, turning and basting once with marinade.
