Recipe(tried): Pineapple Salsa

Jean, I got this from Big Mamma in Texas, Boy, can she cook! She has her own fantastic website, too.

1/2 medium pineapple, peeled, cored and cut into 1/2" cubes
1 small red bell pepper, diced
3 med. green onions, minced
1 serrano chili, seeded and minced
1 1/2 inch piece of fresh ginger, peeled and minced
1 T. lime juice
1/8 t. salt.

Mix all ingredients including reserved pineapple juices in med. bowl. Cover and let stand at least 1 hour at room temp.
