Recipe(tried): Popeye's Red Beans and Rice - missing ingredient

all the ingredients for the Popeye's Red Beans and Rice recipe are correct except for the key ingredient which is pork fat, render 1/4 cup of drippings? fron a couple of ham hocks, bake the ham hocks for about an hour or so or until you have 1/4 cup drippings and add that to the recipe.
