Recipe(tried): Cajun Red Beans and Rice (using miso)

CAJUN RED BEANS AND RICE

2 cups dried red kidney beans, soaked overnight

1 1/2 cups chopped onion
1 cup diced green bell pepper
3/4 cup minced fresh parsley
3 garlic cloves, minced
2 bay leaves
1/2 teaspoon thyme
1 teaspoon salt
2 tablespoons red miso
4 cups freshly cooked brown rice (for serving)
Chopped scallions (to garnish)

Rinse soaked beans and drain well. Cook in 5 cups of water for 50 minutes or until tender, with the bay leaves.

Add onion, bell pepper, parsley, garlic, bay leaves, thyme and salt to pot; simmer over medium low heat for 15 to 20 minutes.

Add miso and simmer for another 5 minutes. Remove bay leaves.

Serve over hot rice, garnished with scallions.

Makes 4 servings
