Recipe(tried): Poppy Seed Cake

Makes one 9" bundt cake. This freezes well.

Poppy Seed Cake
---------------
1 cup poppy seeds
3/4 cup milk
1 1/2 sticks butter
1 1/4 cups sugar
3 eggs
1 teas vanilla
1 Tblsp grated orange rind
2 cups unbleached all-purpose flour
2 teas. baking powder
1/2 teas. salt

Soak poppy seeds in milk overnight.
Cream butter and sugar in large bowl. Add eggs one at a time, beating well after each addition. Add vanilla, orange rind and milk with poppy seeds. Sift together dry ingredients and add into the wet, mixing well. Pour into a well-greased bundt pan and bake in a 375 degree oven 30-40 minutes, or until cake springs back when lightly pressed with fingers. Cool on wire rack for 10 minutes, then remove from pan and cool completely. Scrumptious with lemon curd.
