Recipe: Brown Rice Pudding (using yogurt and honey)

BROWN RICE PUDDING

1 2/3 cups water
2/3 cup uncooked brown rice
3/4 cup milk
1/3 cup honey
2 large eggs
1/4 teaspoon salt
1 cup plain yogurt
Nutmeg or cinnamon (for sprinkling)

In medium saucepan, bring 1 2/3 cups water to a boil. Stir in rice. Cover. Reduce heat and simmer until rice is tender (about 35 minutes).

Beat together milk, honey, eggs and salt. Stir in yogurt and hot rice. Pour into 1-quart baking dish. Sprinkle with nutmeg or cinnamon.

Set dish in pan of hot water. Bake at 350 degrees F, 50 to 60 minutes or until barely set. Cool.

Makes 6 servings
