Some recipes call for you to cut the chicken breasts into chunks before cooking but not ususally chicken salad recipes. Off the top of my head, one recipe that I can think of that calls for you to cut up the chicken first is a recipe for Creamy White Chili posted by manyhats. I can recommend this recipe as well. It's very good and very quick to put together! Most Asian stir-frys (stir-fries? sp.) also call for cutting up the chicken first. The recipes say when you read the directions.
