Recipe(tried): Puerto Rican Rice for Patty

Hi Patty. To start, Puerto Ricans make MANY dishes with rice. If all you want is basic, Puerto Rican style rice, here is the recipe below. If you're interested in Puerto Rican cooking, there's a wonderful cookbook by Yvonne Ortiz called A Taste Of Puerto Rico in which she gives recipes for many traditional dishes. It's a great book.

Basic Yellow Rice
2 T. annatto oil combined w/1 T. corn oil
(to make anatto oil, buy annatto seeds a.k.a. achiote in Spanish. Place vegetable oil in a saucepan and heat over medium heat. Add the seeds and heat the two together until the oil begins to turn yellow. Discard the seeds and use the oil to color the rice)
2 1/2 c. rice
4 - 41/2 c. boiling water or chicken broth
2 tea. salt

Heat the oil in a saucepan and add the rice. Stir to combine, stir in the boiling liquid and salt. Bring to a boil, reduce heat to a simmer, cover and cook over very low heat until the liquid evaporates, about 20 mins. Try not to remove the lid during cooking time, the rice will cook better.
