Recipe: Oatmeal Raisin Cookie Muffins (mini-muffins using yogurt and pumpkin)

1/2 cup raisins
1/2 cup all-purpose flour
1/2 cup quick oats, uncooked
1/3 cup sugar
3/4 tsp. baking powder
3/4 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. salt
1/2 cup low-fat vanilla yogurt
1/3 cup canned pumpkin
2 tbsp. vegetable oil
1 egg white
Preheat oven to 400 degrees F and spray mini-muffin tins with nonstick cooking spray.
Stir together raisins and all dry ingredients in a medium bowl.
In separate bowl, mix together remaining ingredients and add to dry ingredients, stirring just until incorporated. Spoon into prepared muffin tins.
Bake 12 to 14 minutes or until toothpick inserted into center comes out clean.
Makes 18 mini-muffins
