Mary, I hope this is the version you had. There seem to be some variations out there.
PUMPKIN CAKE ROLL
CAKE:
3 eggs, beaten until fluffy
1 cup sugar
2/3 cup pumpkin puree (unsweetened)
1 tsp. lemon juice
3/4 cup flour
1 tsp. baking powder
2 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. salt
FILLING:
1 cup powdered sugar
1 (8 oz.) pkg. cream cheese, softened
6 Tbsp. butter, softened
1 tsp. vanilla
Beat eggs until thick and fluffy. Add sugar, pumpkin, and lemon juice. Sift other ingredients and mix. Spread batter in jelly-roll pan that has been greased and floured.
Bake at 375 for 15 minutes. Turn cake out onto a towel that has been sprinkled with powdered sugar. Roll towel and cake together; let cool.
Meanwhile, beat all filling ingredients together until smooth.
When cake is cool, unroll and spread with filling. Roll up and refrigerate. Chill for 1 to 2 hours.
