Recipe: Rachel Ray's Summer-ish Succotash Salad

SUMMER-ISH SUCCOTASH SALAD

2 cups frozen corn kernels, thawed
1 (15 oz) can butter beans, drained
1 small red bell pepper, chopped
1/2 small red onion, chopped
1 tablespoon red wine vinegar
2 tablespoons chopped fresh flat leaf parsley
2 tablespoons peanut or vegetable oil
salt and pepper (to taste)

Combine corn, beans, bell pepper, and onion and toss with vinegar, parsley, oil salt and pepper.
