Recipe: Raw Corn Salad with Jalapeno-Lime Dressing (blender)

RAW CORN SALAD WITH JALAPENO-LIME DRESSING

FOR THE DRESSING:
1 jalapeno, seeded, chopped
2 tbsp fresh lime juice
1-1/2 tsp honey
1/4 tsp ground cumin
1/4 cup canola oil
Kosher salt and freshly ground pepper
FOR THE SALAD:
4 cups fresh corn (from about 6 ears)
6 radishes, halved, thinly sliced
1/2 cup chopped cilantro leaves
1/4 small red onion, finely chopped

In blender, puree jalapeno, lime juice, honey and cumin. With machine running, add oil until well blended. Season with salt and pepper.

In medium bowl, toss corn with radishes, cilantro and onion. Add jalapeno-lime dressing; toss well. Season with salt and pepper.

Makes 4 to 6 side servings
