Rather than give you a recipe to follow:

1) Soak beans overnight first, then rinse till water runs clear.
2) Saute your favorite spices, along with plenty of onions & garlic, for about 10 minutes.
3) Use about 3 parts liquid for 1 part dry beans.
4) For liquid, use any combo of water, broth, & beer.
5) Add seaweed, preferably a nice strip of kombu, to help reduce gas.
6) Add a bay leaf.
7) Bring to boil. Boil 5 minutes. Reduce heat.
8) Add carrots, celery, turnips, parsnips, or whatever other root vegetables your heart desires, even dried fruit.
9) Simmer for hours, till you can't resist it.
10) Add chopped fresh greens, such as lettuce, spinach, parsley, whatever you like, and cook another 5-20 minutes depending on how cooked you like the greens.

Using these principles, which have never failed me, will enable you to use up all your leftovers and become your own bean expert.
