FRIED GREEN TOMATO FRITTERS
3 large green tomatoes
2 Tbsp. self-rising corn meal
1 large egg
Olive oil
Salt and pepper
Chop green tomatoes, reserving all juice and seeds.
In small bowl, mix tomatoes, corn meal and egg. Add more corn meal to thicken batter, if necessary, or reserved juice from tomatoes to thin batter.
Heat skillet over medium-high heat; add enough olive oil to coat entire surface of pan.
When skillet is hot, drop in spoonful of batter. When brown and crispy on bottom, turn and fry other side until golden brown. Repeat with remaining batter. Remove cooked fritters to paper towel; keep warm until serving.
Sprinkle with salt and freshly ground pepper, to taste, just before serving.
Makes 4 servings
