Recipe(tried): Almond Joy Candy

This is my Mother-in-law's recipe, we make it every Christmas and it's very similar to Almond Joy's (just looks a little different)

ALMOND JOY CANDY

3/4 cup mashed potatoes (all made)
1 lb flaked coconut
1 lb powdered sugar
1 tsp vanilla
whole almonds

Mix ingredients well, drop by spoonfulls on wax paper. Put 1-2 Almonds on top. Cool throughly.

Melt in a double boiler - 1 12 oz pkg of chocolate chips and 1/8 lbs parafin wax. Dip the coconut "drops" then set on the wax paper. Keep refrigerated until all eaten.


You could easily melt white chocolate chips and add lime flavoring instead of the vanilla to get the flavor you'd like.
