Recipe(tried): Cheese Biscuits (like Jim N Nick's) - Change to recipe

I tried the recipe as given and I could taste the baking powder and it was a little too sweet. I read a the comments on the biscuits at several sites and played with it. Here is the adjustments I made:

1 1/4 cup self rising flour (of course no baking soda)
1/4 cup jiffy buttermilk cornbread mix
3/4 teaspoon vanilla
1 heaping cup probably 1 1/4 cup shreaded sharp cheese

Everything else is the same regular size muffins it took 17 minutes in a convection oven

I took this to work and gave one to 5 different people separately for breakfast. They all took the time to warm them. I then asked their opinion and two of the 5 asked me if I went to Jim N Nick's.
