I use a Cajun Season Mix. I can't remember where I got the ingredients, but have been using it for some time, and it works great on pork as well as chicken and beef. Hope you like it.
Cajun Season Mix
4 tsp. salt
4 tsp. paprika
1 tbsp. garlic powder
1 tbsp. black pepper
2 1/2 tsp. onion powder
1 1/2 tsp. cayenne pepper
1 1/2 tsp. thyme, crushed
1 1/2 tsp. oregano, crushed
Combine all ingredients well. Store in an airtight container and keep in the refrigerator.
Pat on meat or poultry or even fish (although I have not tried that) and cook in oven or barbecue.
