Mix fresh rosemary, minced garlic, and olive oil. Make slits all over the roast and stuff the mixture into the slits. Bake at 500 degrees until the meat thermometer hits 140 degrees. If you don't have a thermometer, don't try this recipe until you do. Remove roast immediately and let stand for 10 minutes. You will love it.
