Caribbean Pork Tenderloin

1 teaspoon garlic powder
1 teaspoon dried thyme leaves
1 teaspoon allspice
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon mace
1/2 teaspoon cloves
1/4 teaspoon coarse ground pepper
2 (3/4 lb) pork tenderloin

1. Grill Directions: Heat grill. In small bowl, combine all ingred. except pork; mix well. Rub mixture over pork, coating well.
2. When ready to grill, insert meat thermometer into pork. Place pork on gas grill over med-high heat or on charcoal grill 4-6" from med-high coals. Cook 25-35 min or until thermometer reaches 160 degrees, turning occasionally.

Pineapple Pork Tenderloin
Timesaver: Prick pork with a fork and marinate 1 to 2 hours. For easy cleanup, use a heavy-duty zip-top plastic bag instead of a baking dish.
Preparation time: 5 minutes
Marinating time: 8 hours
Cooking time: 35 minutes
1 (15 1/4-ounce) can crushed pineapple, undrained
1/4 cup teriyaki sauce
3 tablespoons balsamic vinegar, divided
2 (1 1/2-pound) pork tenderloins
1/2 cup hot pepper jelly
2 (2.6-ounce) packages sesame-ginger couscous, cooked

Drain pineapple, reserving juice. Chill pineapple. Combine juice, teriyaki sauce, and 2 tablespoons vinegar in a 13- x 9-inch baking dish. Add pork, turning to coat.
Chill, covered, overnight, turning occasionally. Remove pork, reserving 2 tablespoons marinade.
Broil pork on a lightly greased rack in a broiler pan 4 inches from heat (with electric oven door partially open) 10 to 15 minutes on each side or until meat thermometer registers 160 .
Bring pineapple, reserved marinade, remaining 1 tablespoon vinegar, and jelly to a boil in a saucepan. Cook, stirring constantly, 2 minutes. Serve over sliced tenderloins and couscous. Makes 6 servings.

Honey Sesame Tenderloin

Honey Sesame Tenderloin
August, 1997
1 pound pork tenderloin
1/2 cup soy sauce
2 cloves garlic, minced
1 teaspoon dry ginger
1 bablespoon sesame oil
1/4 cup honey
2 tablespoons brown sugar
4 tablespoons sesame seed

1) Combine soy sauce, garlic, ginger, and sesame oil. Place tenderloin in a heavy plastic bag, pour soy mixture over to coat. Let marinate 2 hours at room temperature or overnight in refrigerator.
2) Remove pork from marinade; pat dry. Mix together honey and brown sugar in a shallow plate. Place sesame seed on a separate shallow plate. Roll pork well in honey mixture, coating well; then roll in sesame seed.
3) Roast in a shallow pan at 400 for 20 to 30 minutes, until meat thermometer inserted registers 160. Remove to serving platter, slice thinly to serve.
