Debbie.D.,.AL (08:32:10) : GINGER LIME DIP
1/2 cup sour cream (I use non-fat)
1/2 cup mayonnaise (I use low-fat)
1 t. honey
1 T. lime juice
1 tsp. grated lime peel
1/4 tsp. ground ginger
Cantaloupe and honeydew slices
In a small bowl, combine the sour cream, mayonnaise, honey, lime juice, lime peel, and ginger. Cover and refrigerate until serving. Serve with melon.
eggy/oz (07:31:57) : SPICED WATERMELON HONEY
3 pounds watermelon rind
1 cup water
6 cups sugar
3 lemon slices
3 pieces of whole dried gingerroot
1/2 teaspoon whole cloves
2 cinnamon sticks
1/4 teaspoon salt
Remove all green outer rind and red meat from watermelon rind: discard. Force remaining rind through food chopper, using coarse blade. Measure; there should be 6 cups. Put in kettle with water. Cook slowly, uncovered, for 25 minutes, or until melon is translucent. Add sugar and lemon. Tie spices in a cheesecloth bag and add with salt to first mixture. Cook slowly, stirring frequently, for 1 hour, or until thickened. Remove spice bag; ladle mixture into hot sterilized jars; seal. Makes 2 1/2 pints.eggy/oz (07:23:10) : Pecan Honey Butter
Serves: 12
1/4 cup honey
1 cup butter or margarine; softened
1/2 cup chopped pecans
Slowly beat the honey into the butter or margarine until well blended. Stir in chopped pecans. Pack in gift containers and refrigerate. Bring to room temperature before serving on biscuits, rolls, or other bread. Makes approximately 2 cups.

6 Pears
2 Apples
1 Orange
1 1/2 lb Sugar
Pare apples and pears. Remove seeds. Peel orange. Remove seeds.
Grind pears, apples, and orange. Add sugar and cook 20 minutes, stirring frequently. Add grated orange rind. Cook until thick.

1 Cantaloupe, quartered and seeded
1 cup diced fresh fruit: strawberries, bananas and/or blueberries
1/2 cup large curd cottage cheese
1 tablespoon honey
1 tablespoon fresh orange juice
1 teaspoon grated orange peel
Place cantaloupe quarters on a platter; spoon 1/4 cup of the fresh fruit in the center of each piece of cantaloupe.
Place the remaining ingredients in an electric blender or food processor and blend until smooth. Spoon over cantaloupe and fruit, (serves 4).

1 pint sour cream
1/2 cup honey
1 can (8 1/4 ounce) crushed pineapple, drained
1/2 teaspoon dried mint, crushed
Assorted fresh fruit
Combine all ingredients except fruit. Serve with fruit (Makes 2/1/2 cups).

1/2 cup butter or margarine, softened to room temperature
1/4 cup honey
1 teaspoon grated orange peel
1/2 teaspoon ground cinnamon

1/4 cup vinegar
1 cup mayonnaise
1 teaspoon prepared mustard
1 teaspoon sugar
1 teaspoon mince onion
1/2 cup honey
1/4 teaspoon minced parsley
Salt, pepper
1/2 cup oil
Mix vinegar, mayonnaise, and mustard until smooth. Add sugar, onion, honey, and parsley and season to taste with salt and pepper. Slowly beat in oil until well blended
Makes 2 cups

1 tbls dry mustard
1/4 cup of honey
1/4 cup soy sauce
1/4 cup dry white wine
1 tbls of grated orange rind
1 clove minced garlic
Instructions: Blend all of the above and use as a marinade or brush on while cooking. Perfect for pork, beef or chicken.
