Recipe: RED LOBSTER BRUSHETTA

Red Lobster Brushetta - 10-98

Makes 48 pieces

5 ounces (1/2 C + 2 T) red pepper,chopped fine
5 ounces green pepper, chopped fine
5 ounces red onion, grated
1 pound 9 ounces petite shrimp (I don't know if this is canned or fresh!)
3 C Fontina cheese, grated
3 c White Cheddar Cheese, grated.
Large loaf of French bread, or Italian bread, cut 1/2" to make 48 pieces.

Mix all ingredients together except bread.

Place heaping onto each piece of bread and put on a cookie sheet. Put oven to 350 degrees, bake for 6 minutes til cheese melts.

I went especially to the Red Lobster Restaurant for this receipe. I asked the waitress if the Chef would give me this receipe as it wasn't on the menu anymore. She went and got her and the Chef gave the receipe to me. She said that it was so popular that they are bringing it back in November, 1998.
