Recipe: Roasted Red Pepper Hummus (food processor)

ROASTED RED PEPPER HUMMUS

1 roasted sweet red bell pepper, peeled, seeded and chopped
1 roasted hot banana pepper, peeled, seeded and chopped*
1 (19 oz.) can chick-peas, drained and rinsed
1/2 cup tahini** or peanut butter
1/4 cup lemon juice
2 tbsp olive oil
2 tbsp water
1 clove garlic, minced
1 tsp ground cumin
1/4 tsp salt
FOR SERVING:
pita triangles or fresh vegetables

In food processor, combine all ingredients for the hummus; process with short pulses, scraping down sides occasionally, until smooth. Transfer to bowl.

Chill for at least 30 minutes to blend flavors or for up to1 week.

Serve with pita triangles or fresh vegetables.

*Iif you don't like it spicy, omit the hot pepper.

** Tahini (sesame seed paste) can be found in most grocery store Delis or Health Food stores.

Makes about 2-1/2 cups
