Recipe: Roasted Red Pepper Sauces (3) - Pasta with Sweet Red Pepper Sauce, Roasted Red Pepper and Ricotta Sauce with Spaghetti, Roasted Red Pepper Sauce

Here are three possibilities, nicky. I hope one of them is what you're looking for.

PASTA WITH SWEET RED PEPPER SAUCE

10 oz. spinach or plain fettuccine or linguine
2 lg. red sweet peppers, roasted or 1(12 oz.) jar roasted red sweet peppers, drained
3/4 cup sour cream
2 tbsp. dry white wine (Chardonnay)
1/2 tsp. salt
1/8 tsp. pepper

Cook pasta. In a food processor or blender, place roasted peppers. Blend until smooth. In a medium pan, heat the pepper mixture for 2-3 minutes on medium-low or until tender. Gradually stir in the sour cream, wine, salt and pepper. Heat through but do not boil. Ladle the pepper sauce on top of the hot pasta. 6-8 side dish servings.

ROASTED RED PEPPER AND RICOTTA SAUCE WITH SPAGHETTI

1 clove garlic
1 container (15 oz.) whole milk ricotta
1 jar (7 oz.) roasted red peppers (pimento) drained and rinsed
1/4 cup olive oil
2 tbsp. chopped fresh flat Italian parsley
1 tbsp. grated Parmesan cheese
1 tsp. chopped fresh oregano leaves
1 lb. pasta, such as spaghetti or radiatore

All ingredients should be at room temperature. Finely chop garlic, add ricotta, peppers and oil. Process for 1 minute or until well blended. Put in large serving bowl and stir in parsley, Parmesan and oregano. Cook pasta in large saucepan of lightly salted water, bring to boil, cook until al dente or firm to the bite. Drain while pasta is still hot, toss with sauce in serving bowl. Serve immediately.

ROASTED RED PEPPER SAUCE

2 (7 oz.) jars roasted red peppers, drained
1/4 cup butter
1/3 cup finely chopped onion
2 large garlic cloves, crushed
1 tbsp. flour
1/2 cup half and half
2 tsp. salt
1/8 tsp. crushed red pepper

In blender or food processor, puree roasted red peppers. Meanwhile, saute onion and garlic in butter. When onion turns golden, remove from heat and add flour. Stir until blended. Cook one minute. Gradually add half and half, salt and crushed red pepper. Bring to boil. Reduce heat and simmer one minute. Add to red pepper puree. Process until mixture is completely blended. Pour over cooked pasta or cooked cauliflower.
