Recipe: Chicken Tarragon from Company's Coming Main Courses by Jean Pare
Main Dishes - Chicken, PoultryLisa, Although I have not tried this recipe, I have all but 1 or 2 of the Company's Coming books.
I love them! Jean Pare is really great!
TARRAGON CHICKEN
Source: Company's Coming Main Courses by Jean Pare
4 chicken breasts, halved (boneless is best)
10 oz. can condensed cream of mushroom soup1 cup sour cream
1/4 cup sherry (or apple juice)
1 1/2 cups fresh mushrooms, sliced or whole
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. tarragon
1/4 cup sliced almonds
Place chicken in small roaster.
Mix next 7 ingredients together. Spread over chicken. Sprinkle with almonds. Cover.
Bake in 350F oven for about 1 1/2 hours until tender.
Serves 6 to 8
