Recipe(tried): Roasted Turkey with Herbs & Vegies

I am allergic to wheat,so I can't stuff my bird.. I found this recipe a few years ago.

Roast Turkey with Herbs & Aromatic Vegetables

Thaw your bird however. Make a herb rub of both fresh (when available) and dried herbs.. I suggest that you use your favorite spices. I use.

Thyme (approx. 1 1/4 cup ea.)
Sage
Basil (set aside 4 beautiful full basil leaves for under breast skin)
Oregano
Marjoram,
Salt& Peper 2 Tbls. ea.
Dried herbs add 1 1/2 Tbls.ea of the same herbs as above.

Mix in a med bowl. Rub mix into the cavity. Keep enough of this mix to the side to sprinkle in the out side (aprox.3 Tbls)VEG STUFFING: 2 small onions cut all into 1/4 in pieces
2 carrots
2 celery stalks
2 leeks
1 WHOLE head of garlic(yes girls & boys the whole head) cut cross-
wise
Mix in a large bowl. .
Pack this mixture in the cavity after you have rubbed the herb mixture in & truss the bird.

Take your reserved Basil leaves and slide your hands under the skin of the breast carefully lifting the skin place the leaves between the breast and the skin,make sure that they are laying nice and flat. Pat the skin back into place.
This makes a beautiful presentation and also seasons the breast with the peppery taste of the Basil.

You are ready now to fill the house with the most wonderous smells..

Rub the bird with extra virgin olive oil and sprinkle the 3T. of reserved herb rub on to the bird.Place in a preheated oven 450o F. for 1hr.. turn oven down to
325o F. roast until thermometer reaches 185o F baste with pan juices or herb butter (see at bottom)..

I always cook my turkey according to size ect...Handle your turkey as you would anyother time reg: resting before cutting serving tenting with foil ect. The herb vegies are not intended to be eaten but my sister eats them every year, she loves it..

Herb buter
1 c. butter (room temperature)
2T. fresh parsley (minced)
1T. fresh sage " or 1t.ground or rubbed
1T. fresh lemon juice
2t. fresh thyme (minced)
1/2t.fresf oregano (minsed) or a pinch of dried
1 small clove of garlic (finely chopped)
Salt & Pepper
Beat all ingredients in med bowl to blend. brush on the bird as needed early in the roasting. I have use what I have left over for my mashies. Try it
