Recipe: Roesti Potato Pizza

3 large Yukon Gold or baking potatoes, peeled and grated (about 4 cups)
1 tsp. salt
2 Tbsp. olive oil
1/2 cup tomato sauce
1/2 cup grated part-skim mozzarella or smoked mozzarella cheese
1/4 cup crumbled soft unripened goat cheese
1/2 cup shredded fresh basil, divided
Pat potatoes dry with a tea towel or paper towels. In a large bowl, toss potatoes with salt.
Brush a 12-in. metal pizza pan with a little of the oil. Press potatoes into pan and brush with remaining oil.
Bake in a preheated 425 degree F oven for 30 minutes, or until potatoes are cooked and crusty.
Spread tomato sauce over potatoes. Sprinkle with mozzarella, goat cheese and 1/4 cup of basil.
Reduce heat to 375 degrees F and bake pizza for 15 minutes or until cheese is bubbling. Sprinkle with remaining basil.
