Rosemary, I have not tried this recipe, but I'm a big fan of Rose Levy Beranbaum and her Cake Bible. I'm posting this so you can compare the recipes. Hers calls for a pound of butter also, but fewer eggs and less sugar! Her technique is comparable.
ITALIAN MERINGUE BUTTERCREAM
from Rose Levy Beranbaum's Cake Bible
2 large eggs
2 Tbsp water
1/3 plus 2 Tbsp sugar (3.25 oz)
2 cups (1 lb) butter
So I would guess that the pound of butter called for in the Cannoli Cake recipe is correct.
The Cake Bible is a wonderful book for anyone who bakes cakes from scratch - full of information. Take a look at it sometime!
