ISO: Excalibur Tournament of the Kings Tomato Soup

I have made this before and it turned out wonderful. I can't remember the measurements, however. But this is the recipe for the Tomato soup served at the Tournament of the Kings show....

Below is the secret recipe. Keep in mind that this normally feeds 900 people, so I am not sure of the measurements.

Tomato Paste
Tomato Puree
Heavy Whipping Cream
Dried Sweet Basil
Chicken Stock
Sugar
Salt

Roux-(flour and butter cooked together.) Use cornstarch and water as alternative.

Directions: In large stockpot, combine tomato products, basil, chicken stock and sugar. Bring to a boil and let simmer for approximately 30 minutes.

Add heavy whipping cream. Bring back to a boil. Thicken with roux and adjust seasoning with salt.
