CHICKEN SPINOCOLLI
I used to work for UNOs and made this dish many times.
Find the flattest chicken breast first. Take plastic wrap and place it under the chicken, filet it and flatten it out.
Sprinkle with dehydrated Hidden Valley Ranch dressing mix so that it sticks. Top with a little bit of shredded mozzarella, spinach, feta cheese, chopped tomatoes, and blanched broccoli goes inside.
Roll it with the plastic wrap and take out the plastic as you roll it.
Spray down your pan with nonstick spray and cook the rolls in the oven with a little bit of water so they stay moist. The temperature should be 410 degrees F (at Unos it took about 15 minutes in their oven). Once the chicken is almost cooked place sliced mozzarella on top of the chicken, then continue cooking it in the oven or broil it if you want a little crunch.
Cut the rolls once they are cooked at a bias and turn over the last one to show off the goods.
For the pasta, it is penne pasta with Alfredo sauce and a little bit of pesto. Top the pasta with one row of chunky marinara where the chicken will be set.
