SAUCEPAN MOLASSES COOKIES
"Just a quick stir in the saucepan and these thick, soft cookies are ready to bake."
2/3 cup Land 0 Lakes Butter
3/4 cup firmly packed brown sugar
1/3 cup molasses
1 egg
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon ground ginger
Heat oven to 375 degrees F. Melt butter in 3-quart saucepan over low heat, stirring constantly (2 to 3 minutes). Stir in brown sugar and molasses.
Remove from heat. Stir in egg and vanilla until well mixed (1 to 2 minutes).
Stir in all remaining ingredients just until combined (1 minute). Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
Bake for 7 to 9 minutes or until set.
Makes 3 dozen cookies
