DELUXE CHEESY POTATOES
1 (6 oz.) pkg. Betty Crocker Hash Browns with Onion mix*
4 cups hot water
1 cup shredded cheddar cheese
1/2 (10 3/4 oz.) can condensed cream of chicken soup
2/3 cup milk
1/2 cup sour cream
1/4 cup finely chopped onion, if desired
1/4 cup butter, melted
1/2 tsp. salt
1/8 tsp. ground black pepper
1/2 cup corn flake cereal, crushed (for topping)
Heat oven to 375 degrees F.
Cover (dry) potatoes with 4 cups hot water in 3 quart bowl; let stand uncovered for 15 minutes. Drain thoroughly.
Stir in remaining ingredients except cereal. Spread potato mixture firmly and evenly in an ungreased 8x8-inch baking dish; sprinkle with cereal.
Bake uncovered until golden brown, about 50 minutes.
*Betty Crocker's current product is: Seasoned Skillets Hash Brown and comes in a 5.2 oz. package.
