Recipe(tried): Runzas from Nebraska

What a wonderful project! This recipe for runzas can be made with frozen bread dough. I usually use homemade dough but the frozen kind works pretty darned well. President Clinton asked for a special delivery runza when he was in Nebraska. Hope your students like them.

1 pound hamburger
1/4 head finely chopped cabbage
1/2 cup finely chopped onion
Salt & pepper to taste

Fry the hamburger, cabbage and onion until meat loses its red color and veggies are wilted. This is the secret to a smooth, good tasting filling. Transfer some of the filling to a blender and process on low for a few seconds.

Pinch off egg sized pieces of thawed bread dough. The sandwiches are rectangular so do your best to roll out the dough into an approximate 5x7 shape. Dough should be uniformly thin. It's kind of stretchy so this can take some work with the old rolling pin.

Put about 3 heaping T. filling on one side of the dough rectangle. Moisten edges and fold over to seal. Bake runzas in a 350 degree oven for 20 minutes or so, until lightly browned.
