Wisconsin Cheese Soup
Misc.This is my favorite version. I hope you enjoy it.
Wisconsin Cheese Soup: (8 servings)
4T butter
1T minced onion
1/2c. celery, fine dice
1/2c. carrot, fine dice
1/2c. all-purpose flour
1T cornstarch
1/8t. paprika
1/8t. baking soda
3c. whole milk
3c. chicken broth
2 lbs. aged sharp cheddar, shredded
2 drops bitters
minced parsley
Melt butter in large pot. Add onion, celery, and carrot. Cook gently, stirring often, about 10 minutes.
Sift together flour, cornstarch, paprika, and baking soda. Gradually add to veggies and stir constantly for 1 minute. Add the milk and broth while whisking. Heat to a simmer. Cover and cook, stirring often, for 10 minutes. Remove from heat. Add the cheese and bitters, stir until smooth. Taste for salt and serve garnished with parsley.
