Recipe: Saucy Little Meat Loaves (with catsup-based topping, Quaker Oats recipe, 1950's)
Main Dishes - Beef and Other MeatsSAUCY LITTLE MEAT LOAVES

1 1/2 lb. ground beef
3/4 cup Quaker or Mother's Oats (quick or old fashioned, uncooked)
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1/4 cup chopped onion
1 egg, beaten
3/4 cup milk
FOR THE TOPPING:
1/3 cup catsup
1 tablespoon firmly packed brown sugar
1 tablespoon prepared mustard
For meat loaves, combine all ingredients for the meat loaves thoroughly. Shape into 6 individual meat loaves in shallow baking pan.
For topping, combine all ingredients for the topping; spread over top of each loaf.
Bake in preheated moderate oven (350 degrees F) about 35 mlnutes or until done.
Makes 6 small meat loaves
VARIATION:
FOR ONE LARGE MEAT LOAF:
Combine all ingredients. Pack into (8 1/2 x 4 1/2 x 2 1/2-inch) loaf pan. Spread with topping. Bake in moderate oven (350 degrees F) for about 1 hour.
