SAVORY RICE MEAT BALLS
1 cup uncooked Minute Rice
1 egg, slightly beaten
1 lb. ground beef
2 tsp. salt
2 tsp. grated onion
1/8 tsp. marjoram
Dash of ground black pepper
2 1/2 cups tomato juice, divided use
1/2 tsp. sugar
Chopped fresh parsley (optional, for garnish)
Mix all ingredients (except 2 cups of the tomato juice, sugar and parsley) and Minute Rice right from the box. Gently shape mixture into 12 meat balls.
Mix together sugar and remaining 2 cups tomato juice. Pour into skillet with meat-and-rice balls. Bring just to a boil. Cover; simmer 15 minutes, basting occasionally.
Sprinkle with chopped fresh parsley, if desired.
Makes 6 servings (2 meat balls each)
