Recipe: Sesame Salt (mortar, spice grinder or mini professor)

1/2 cup sesame seeds
2 teaspoons coarse salt* (or to taste)
Toast the sesame seeds in a medium skillet over moderate heat, stirring frequently, until fragrant and lightly browned, 3 to 4 minutes. Transfer the seeds to a plate to cool.
In a mortar, spice grinder or mini processor, grind the seeds with the salt to a coarse powder.
*The seeds may also be ground without the salt.
Makes 1/2 cup
