SHRIMP IN LEMON CREAM SAUCE
2 tablespoons butter
2 cloves garlic (minced)
1 lb peeled, uncooked shrimp (I use more shrimp)
juice of 2 lemons
1 teaspoon lemon zest
1 teaspoon dried oregano
1 cup heavy cream
freshly grated parmesan cheese
1/2 cap liquid crab boil (optional, to taste)
1/4 teaspoon white pepper
Melt butter in large heavy sauce pan, over medium heat. Lightly brown garlic 1-2 minutes.
Add shrimp and cook 1-2 minutes.
Add lemon juice, lemon zest, and oregano, continue to cook until shrimp turns pink, another 2-3 minutes.
Reduce heat to low and slowly stir in cream; heat gently for 2-3 minutes.
Add grated parmesan cheese and continue to cook until slightly thickens. Stir in crab boil and white pepper.
Serve over angel hair pasta, fettucine, or linguine.
This can also be made with chicken breast and a few capers.
I get rave reviews when I serve this.
