Hi Joyce, Here are two recipes for you to check out. They aren't exactly what you described, but maybe with a few changes you can get close to your Dad's recipe. Please let us know if you come up with anything and we'll keep looking! - Betsy
SKILLET SCRAMBLE
Makes 4-6 servings
1 (10 oz.) pkg. frozen leaf spinach, thawed
4 eggs
1 tbsp. water
1 lb. lean ground beef
1/4 cup chopped onion
1/2 tsp. salt
1/4 tsp. ground black pepper
3/4 cup shredded Colby-Jack cheese (about 3 oz.)
Drain spinach well and coarsely chop; set aside.
In a medium bowl, beat eggs and 1 tablespoon water; set aside.
Crumble ground beef into a 10-inch non-stick skillet. Over medium-high heat, cook and stir meat until no longer pink. Spoon off grease if desired.
Add spinach and onion to beef in skillet. Over medium-high heat, cook and stir for 2-3 minutes or until spinach and onion are tender. Sprinkle with salt and pepper.
Reduce heat to medium. Stir in eggs and cook just until set, stirring occasionally. Remove from heat. Sprinkle with cheese. Cover with a lid and let stand for 3 minutes or until cheese melts.
Serve from skillet. Serve with corn bread and relishes.
JOE'S SPECIAL
2 cups sliced mushrooms
2 tbsp. olive oil, divided use
1 small to medium onion, chopped
2 cloves garlic, chopped
1 lb. lean ground beef
1 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. oregano
1/4 tsp. basil
1/4 cup dry red wine
1 tsp. Worcestershire sauce
1 (10 oz.) pkg. frozen chopped spinach, thawed, water squeezed out
3 eggs, slightly beaten
Cherry tomatoes, cut in quarters (optional, for garnish)
Parmesan cheese, finely grated (optional, for serving)
In large skillet, saute mushrooms in 1 tablespoon oil; remove and set aside.
In remaining tablespoon of oil, saute onion and garlic. Add beef, salt, pepper, oregano, and basil. Cook, breaking up beef, until meat browns. Add wine; cook a few minutes over high heat until liquid evaporated.
Add Worcestershire, sauteed mushrooms, and spinach. Cook 5 minutes. Add eggs, stir until eggs are barely set.
Serve over hot cooked noodles (may use "kluski" noodles). Hot sourdough bread is a perfect companion to this dish.
