Recipe: Snow Pie

Misc.
Barb. Here is one I found.

SNOW PIE

1 pint water
1 1/2 cups sugar
5 rounded Tbsp. cornstarch
4 egg whites (pasteurized)
2 Tbsp. vanilla
1/4 tsp. salt

Mix sugar and cornstarch together. Add water. Bring to boiling point; cook, stirring constantly. Cook 3 to 4 minutes. Remove from heat; add slowly to egg whites which have been beaten until stiff. Add vanilla and salt. Beat until mixture is consistency of snow. Pour into a baked pie shell.

Let cool. You may add whipped cream on each piece when it is served, if you want to, but not necessary. Variations: You may add bits of maraschino cherries, nuts, chocolate chips, etc., to mixture just before pouring into pie shell.
