Recipe: Soba Noodles

Soba Noodles
2 Large Eggs
1 cup buckwheat flour
1/2 cup rice flour
1/2 cup oat flour
1/2 tsp. coarse salt
2 - 3 tablespoons water (use just enough to make a firm dough)
Knead well, let rest 10 minutes, then put through pasta roller several times to continue kneading. Cut through spaghetti cutter or roll flat, roll up like a jellyroll and slice VERY thin slices that'll unroll as spaghetti. Cook in boiling salted water or broth 1 or 2 minutes until tender. Dry what you don't cook by hanging over a dowel rod and bag when dry or freeze for later use.
