Recipe(tried): Roll Up Appetizer Sandwiches (using tortillas, make ahead)

ROLL UP APPETIZER SANDWICHES

These are great for parties or picnics or game day or even just lunches.

2 packages (8 oz. each) cream cheese, softened
1/3 to 1/2 cup. Miracle Whip salad dressing
2 tbsp. finely chopped green onion
1/4 cup black or green olives, chopped
3/4 pound thinly sliced or shaved ham
3/4 pound thinly sliced chicken or turkey
3/4 pound thinly sliced roast beef
3/4 pound thinly sliced salami
1 to 2 cups finely grated Cheddar, Colby jack, Mexican cheese blend
1 pkg. Azteca super size flour tortillas, room temperature

Combine cream cheese, Miracle Whip, onions, and olives. Spread thin layer of mixture on tortilla.

Now choose two to three pieces of meat arrange them over cream cheese. Sprinkle shredded grated cheese over top of meat slices.

Lay out a piece of plastic wrap on the counter and make sure it is 4-6-inches longer than the tortilla is wide; lay tortilla on top of it. Tightly roll up tortilla. Wrap individually in plastic wrap individually in plastic wrap tightly twisting the ends to seal them. Place in refrigerator at least 3 hours or overnight.

TO SERVE:
Cut into 3/4-inch slices or serve as a whole sandwich.

VARIATION:
You can substitute whatever thinly sliced meat or vegetables such as lettuce or onions or mushrooms for what is listed above.
