Recipe: Soft Custard, Soft Custard Sauce
Misc.Here is a regular method and a microwave method.
SOFT CUSTARD SAUCE
2 egg yolks
1 c. milk
1/4 tsp. vanilla
2 Tbsp. sugar
1/8 tsp. salt
Scald milk; add sugar and salt to egg yolks. Beat
slightly. Add scalded milk gradually to egg mixture, stirring
constantly. Cook until mixture coats spoon. Cool. Add
vanilla. Serve over gelatin, pound cake or fresh fruit.
SOFT CUSTARD
1 1/2 c. milk or half and half
1/3 c. sugar
2 1/3 Tbsp. cornstarch
3 eggs (or 6 egg yolks),
beaten
1/4 tsp. salt
1 tsp. vanilla
Mix together milk, sugar, cornstarch and salt in a 1
quart casserole until well blended. Microwave on High (100%)
for 6 to 7 minutes or until thickened. Stir a little hot
mixture, remaining hot mixture. Microwave on Medium-high (70%)
for 1 to 2 minutes. Stir mixture occasionally. Stir in
vanilla. Chill until ready to serve. Pour into serving dishes
or serve as a sauce.
