Some Avo recipes for you.........hope you like themFettuccine with Avocado

2 Tbsp olive oil
1/4 cup sherry wine vinegar
1/2 cup fresh basil, chopped
1/2 cup green onions, chopped
1 cup sweet green pepper, diced
1 1/4 cup sun-dried tomatoes, diced
1 medium avocado, diced
1 lb dried fettuccine noodles (or any dried pasta)

will serve 6

In a large bowl, combine olive oil, vinegar, basil, green onions, sun-dried tomatoes, and half of the avocado. Toss ingredients well to evenly coat with the oil and vinegar. Cook pasta in boiling water for 6 minutes or until al dente. Drain pasta and pour in salad bowl with the other ingredients while the pasta is still hot. Toss together and serve immediately, useing the remaining avocado as a garnish on top of the pasta.Feta Avocado Spread

1 4-ounce package feta cheese, crumbled
1 tablespoon olive oil
4 ripe avocados, peeled, seeded, and cut into chunks
1/2 teaspoon TABASCO Pepper Sauce
juice of 1 lemon
salt to taste
1 baguette French bread or bread of choice

In a medium bowl, combine all ingredients with a fork until well blendedand still slightly lumpy. Spoon into serving bowl and refridgerate until ready to serve.
Serve with sliced baguette rounds or bread of choiceWill get some more to you later these are just 2 of my favourites.
