Recipe(tried): Soups (Serves 1 or 2) - Celery Soup, Bean Soup, Onion-Potato Soup, Minestrone Soup

Soups
CELERY SOUP

INGREDIENTS
2 stalks of celery
1 boiling onion or 2 tbsp leek
1 small potato
1 tbsp butter
1 1/4 water or stock
2 slices of bacon or 2 tsp real bacon bits
salt
pepper

TOOLS
heavy saucepan
blender or food processor

PREP
chop celery & onion fine
peel & dice potato
cook & crumble the bacon

DIRECTIONS
melt the butter, add leek, celery & potato.
salt & pepper
saute with lid on for 10 minutes
pour in water or stock
simmer for 10-15 minutes
blend or puree smooth
return to saucepan add crumbled bacon
serve with croutons

BEAN SOUP

INGREDIENTS
1 cup dried mixed beans
1 quart water
3 slices bacon or 2 oz piece of salt pork
1 med onion
1 small carrot
1 tbls parsley
pinch sage
pinch thyme
1 bay leaf
1 tsp crushed garlic
2 quarts water
[shot of Tabasco]
[shot of sherry]

PREP
soak beans in 1 qrt water overnight

drain beans
cube bacon or salt pork
dice carrot & onion

DIRECTIONS
saute bacon in pot until it renders itself into grease.
add onions, carrots & herbs.
Stir until onions get translucent, but NOT DARK BROWN.
add beans & 2 quarts water.

Simmer on stove top covered 2-3 hours
pressure cooker 1+ hour
crock pot 6-8 hours

ONION-POTATO SOUP
QUANTITY 2

INGREDIENTS
2 tb butter
1 small onion sliced thin
1 medium potato, peeled and thinly sliced
1 cup hot chicken broth
2 peppercorns, crushed
2 whole allspice, crushed
1/4 cup finely chopped celery tops
2 tbsp heavy cream
salt
pepper to taste

DIRECTIONS
Melt butter in saucepan.
Add onion and potato and saut , stirring, for 5 minutes.
Stir in the chicken broth, peppercorns and allspice. Bring to a
boil, cover and simmer for 30 minutes, or until potatoes are tender.
Beat soup with a whisk until potatoes are broken up into tiny pieces.
Add the celery tops and the cream. Heat and season to taste with salt and pepper.

MINESTRONE SOUP

INGREDIENTS
1 8oz can mixed vegetables
1 8oz can stewed or diced tomatoes
1 cup/ can water
2 tbls of some small pasta or
a hand full of leftovers
dash parsley
dash basil
dash oregano
pinch red pepper flakes
salt
pepper

TOOLS
saucepan

PREP
cut up stewed tomatoes

DIRECTIONS
Combine ingredients
simmer 15 minutes.
