Recipe: Asparagus Cream Soup (blender)

2 bunches asparagus, cut in bite size pieces
1 onion, chopped
1/4 cup olive oil
3 cups chicken stock
salt and ground black pepper (to taste)
1 /(8 ounce) package nonfat cream cheese
1/2 teaspoon ground nutmeg or curry powder
chopped chives (for garnish)
dabs nonfat sour cream (for garnish)
Saute asparagus with onion for 4-5 minutes in olive oil.
Add chicken stock and simmer for 15 minutes. Season with salt and pepper to taste.
Puree mixture in blender in batches. Add cream cheese to mixture and blend.
Add nutmeg or curry and chill.
Serve garnished with sour cream and chives.
Servings: 6
