Recipe(tried): Southern White Beans and Rice with Potatoes

I live in a little town south of New Orleans and come from a large family (7kids) and was raised on white beans and rice with potatoes as a side dish.
This is how my mom cooked them don't really have the exact ingredient amounts since this was done without a recipe
My mom boiled 2 pounds when she cooked them.
She washed them then put them in a pot and cover them generously with water about 3 inches over the top of the beans. She added in her salt shoulder or any other meat such as ham or smoke sausage or taso. Boil them for 1 1/2 hours to 2 hours. When the beans became tender she would then add a little cooking oil about 2 tablespoons and added her onions and bell peppers at the same time you can also add the salt and pepper then too. Do not add the salt at the beginning cause it tends to make your beans hard add it at the end. Stir in them frequently and use a slotted spoon to mash the beans along side of the pot. they are done when they are tender and creamy. Sevre over cooked white rice. the cooking time may be more or less depending on how fresh the beans are.
