Recipe: Old-Fashioned Noodle Pudding (using apples and raisins, Jewish)

OLD-FASHIONED NOODLE PUDDING

"A traditional Jewish pudding, or kugel, can be a rich side dish or wholesome dessert."

4 tablespoons butter, melted
1/4 cup plus 1 tablespoon sugar, divided use
2 eggs, beaten
1 cup sour cream
1 cup creamy cottage cheese
3/4 cup raisins
1 apple, cored, peeled and thinly sliced
1 (7 ounce) package wide egg noodles, cooked and drained
1 cup cornflakes, crushed
1 1/2 teaspoons ground cinnamon

Preheat oven to 350 degrees F. Coat an 8-inch square pan with butter.

In a large mixing bowl, combine butter, 1/4 cup of the sugar, eggs, sour cream, cottage cheese, raisins and apple. Stir to combine. Add noodles, and mix thoroughly. Pour into prepared pan, smoothing top.

In a bowl, toss together corn flake crumbs, remaining sugar and cinnamon. Sprinkle over top.

Bake 45-55 minutes, until top is brown and crunchy and knife inserted in center comes out clean.

Serve hot or cold as side dish or dessert.
